Mini Lemon Meringue Cheesecakes

I made these last week and they were Delicious! Mini Lemon Meringue Cheesecakes. The recipe called for mini muffin pans but I used regular sized muffin pans and ended up making about 24. Now, if I were to make them again.... wait... WHEN I make them again, I will probably make only a dozen and a half as I felt that there wasn't enough "cheesecake" in the cheesecake. Of course as the original recipe called for mini muffin pans, you should get 48 minis.
